Selling my Hatsukokoro Inazuma Aogami Super 150mm Petty. Selling for $250 shipped in the US (or we can work out the shipping sent anywhere else).
Brand new in box, I paid ~$245 shipped for this without a handle and I have a couple of handle options you could choose from. First is Ebony with caramel horn, and second option is multi-dyed maple burl with copper spacer.
Nothing at all wrong with this knife, it is one of my absolute favorite Aogami Super knives with so much character to it, only problem is I rarely use petty knives and if I do it is almost always a much smaller one for something basic like cutting a piece of garlic. I want to give this one a nice home.
Product description:
These stunning knives from Hatsukokoro are some of the most beautiful we have on offer. With their combination of a dark, almost matt finish, down through the damascus layers to a superb shine against the cutting edge, the appearance is influenced by lightning.
Aside from beauty, the performance is awesome too. Blue Super steel is used in this range which is one of strongest performing steels in Japanese knife manufacture. As a carbon steel it can corrode, so a little extra maintenance to keep it clean and dry is required, but for that small additional effort you unlock the true potential of the incredible sharpness of this steel. Not only can Blue Super achieve arguably as sharp an edge as anything, but it retains that sharpness superbly while also being easy to sharpen when needed.
About the shape - This is the knife for smaller jobs that are done on a cutting board, or even in the hand. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.
About Hatsukokoro Inazuma AS - The Hatsukokoro Inazuma (translates as "lightning") AS is a hand-forged masterpiece, made by a talented Blacksmith in Tsubame Sanjo who prefers to remain anonymous. This knife has an Aogami Super core, with softer iron cladding. This combination of steel allows for the blacksmith to create a beautiful finish of folded steel, tsuchime, and kurouchi - honestly feels like it should be too much, but here it is just right.
We've also found these to be some of the thinner knives that we've seen for a while, the edges that are scary sharp. We are thrilled to carry this line from Hatsukokoro who continue to curate an exceptional series of knives.
Rockwell Hardness
63:64
Edge/Bevel
Double (50/50)
Blade Length
150mm
