Hello everybody, I am an enthusiast cook who also likes good tools.
Because of this I started thinning my european knives for an increased cutting performance after I learned how to sharpen them.
For some reasons I am also into chinese chef knives.
Hopefully there will be some interesting discussions about these topics here.
