), so I've started wanting nicer knives for myself and my better half. She's also the better cook, while I'm the prep guy + sharpener. I've been researching the forum for the last year and finaly decided to join in. We've purchased recently a few japanese knives (from Shiro Kamo, Yoshikane and Tojiro) and i'm in the process of learning how to sharpen the blades on stones. My favorite so far is a Yohikane hakata shirogami 2 (or "onion slayer" as we call it). Hope to learn and share knowledge with you, as well as take part in trading.
