Hi all, been lurking around the forums for a while and finally decided to make an account. I picked up my first Japanese knife last summer and my collection hasn't stopped growing since. Trying to collect all the different types of steels, but so far sg2 and AS have been favourites.

I got a Seki Kanetsugu Zuiun bunka as my first foray into SG2 last fall and it just feels like it cuts through things before I even try to. I wasn't a huge fan of damascus steel patterns having seen too many friends with laster etched or screen printed pattern knives, but the reall thing really looks stunning, and the heptagon handle feels great. From there I picked up a well worn Takamura Akagouhan 210mm gyuto that I did a bit of refinishing on and got sharpened, which really made it sing, this one it my go to for letting friends try out/ taking around to cook at peoples houses. The most recent addition to the SG2 collection is a set of Ryusen Blazens a 210mm Gyuto and Nakiri which I haven't yet had the chance to use much, but they sure do cut up paper well, hahaha.

On the AS front I have a Haruyuki Shiso Nakiri, which just falls through potatoes and I loved the way the patina formed with hints of blue, this one might have some competition now with the previously mention Ryusen. The other one in my collection is a bit of an outlier that popped up on marketplace and I knew I would regret passing up, so didn't, a Fujiwara Denka 240mm gyuto. I know that they can be a little polarizing and have heard about the fit and finish issues, but this one is great and just slides through everything I throw at it. Really love this knife, the finger notch looks and feels awesome, only thing I think I would change is maybe having it in a wa handle instead of a western one, but I feel like with a pinch grip you can't really feel too much of a difference in use, or so i tell myself.

Welcome! I just visited Toronto for a day trip while visiting Niagara Falls with my wife for our one year wedding anniversary. Cool city! Do you go to any of the shops around you often? I visited Tosho and Knifewear hoping to find a few and things but ended up not getting anything unfortunately but still a cool experience. The guy I spoke with at Toshu was very welcoming and we chatted for a bit.
 
I stop over at knifewear a few times a year during sales, but I have been meaning to get out to the other ones and look around. I live a bit north of all the shops (Toronto is an hour away from Toronto 😂) and can't seem to convince my friends to do a knife crawl with me.

Got one coming up soon! You'll definitely need to do that crawl someday!
