Hi all, I'm a 25-year old guy who has always cooked at home with Chinese cleavers.

I was excited to begin my journey and order my very first non-cleaver, a Toyama 240mm SS clad gyuto from JNS. Then I read about the smoke odor which comes with JNS deliveries. I figured it couldn't be that bad, right?

My sense of smell is terrible, so when I opened the packaging, my first thought was "is the odor part of the handle or just the packaging?" So I brought the Ho wood handle right up to my nose and gave it a good sniff. Big mistake. I immediately started dry coughing. Not having learned my lesson, I sniffed the packaging as well and continued coughing. A few minutes later, the dry coughing turned into wet coughing. I chucked the knife (carefully!) and its packaging into my garage. I continued to cough intermittently for the next few hours. I had no idea sniffing a wooden handle would have such a strong effect on me!

But, luckily, my throat is no longer itchy this morning. The knife is beautiful. I'll leave it in the garage for another week or two for the odor to dissipate. If that doesn't help, maybe I'll try cleaning the wood. Just, please don't make the same mistake I did haha.
 
I think I left a JNS knife in my basement for a week or two before it could enter my kitchen. However a custom I once ordered was so rank it sat in my basement for 2 months. I think it was rancid finish. It all goes away eventually.
 
If you open up your windows to air out the handles, your neighbors will probably end up with secondhand smoke.

And oh yea, welcome!
 
Get rid of the packaging and wash the knife. I ordered some ebony handles from him and noticed the smell.

Somebody there must smoke like a wood-fired steel mill.
 
I remember reading this thread and think. How bad can it be?

But after getting my first knife from JNS, I gotta say wow. The smell of cigarette smoke is really intense.

The packaging was absolutely the worst.

The knife still smell a bit burnt/smoked. But to be honest I'm not sure if it's cigeretesmoke or a burnt smell from mounting the handle.

The knife was a Kearu stainless in sld.
