I’ve been working around restaurants in Canada for about 25 years. I have had a long interest in vintage Western cutlery and more recently started exploring Japanese knives.
I accumulated a few dozen stainless knives while building out my kit for work in the earlier years, and started acquiring vintage carbon steel more as collection pieces. I’m a sucker for thrift store bargains on anything around Victorinox quality or higher. Because of this I have a fairly large hoard of knives to practice sharpening and repairs on.
In the last couple of years I have become more interested in Japanese knives. I have a few budget starter knives, but haven’t yet started to build out a curated set of work knives.
These days I spend a lot of time trying to learn more about sharpening, working on knives for friends whenever they will let me. I would like to handle some higher performance knives to get an idea of where the bar can be in terms of excellence in geometry and aesthetics.
