Gday all,
Absolutely love seeing everyone's beautiful blades and what they make with them.

Just getting into sharpening and enjoying it, spent today fixing up a badly sharpened Chinese cleaver, and realising I need some better stones!

Currently trying to avoid buying a honesuki. And that's me! Cheers.

Which part of Melb are you from? There are quite a few KKFers in Melb.

There is absolutely no reason to avoid buying a honesuki. Well... maybe if you don't eat chicken.
 
Welcome aboard! Nothing wrong about getting a Honesuki. Learning how to sharpen them is a lot of fun, and your sharpening will benefit from it. A simple carbon one isn't that expensive — most of them are above all utilitarian knives.
