Greetings from Spain. I stumbled across this forum this morning and I like what I see. It seems like a great community.
Here's my kitchen knife story...
I recently bought a couple of Sabatier knives which In my humble opinion are under-rated but feel great in the hand. I also have a trusted Gustav Emil Ern (10 inch chef's knife) which I've had for over 20 years and I've also owned Global knives in the past.
I'm hoping to find out more about what knives others use (European or Asian) and their preferences as time goes by.
