How does one change the angle of bevel?

For example to thin a 35 degree to 15 degree. If I want 15 degree bevel do I simply start a micro bevel of 15 degrees until it grinds far enough to get the entire bevel to 15?

I have a 1k shapton what is a good bang for the buck low grit (what number grit) that the 1k can pair well to remove scratches
 
Yep, pick an angle and stick with it...any one you like.

Any low grit stone is fine, seems to be more a matter of personal preference. I like my inexpensive Suehiro Cerax 320 (double thickness) that I got from Stu @ Tools From Japan...very good for the money and the scratches can easily be sharpened out by a 1k.
