I picked up what I think is a Watanabe 270 gyuto in stainless-clad blue 2 at a kitchenware yard sale recently, but I was hoping to confirm. The kanji looks similar to Watanabe’s, but it’s on the left side rather than the right as I’ve usually seen and it’s very light/shallow.
I initially thought it was stainless-clad, but I’ve noticed some blue patina on some parts of the cladding after cutting some chicken. I’m not sure if that means it’s carbon clad or that the cladding is gone on those spots and it’s core steel patina.
Side note: I got it as a restoration project and it seemed to be a steal at $100. It’s scratched up and needs some refinishing and sharpening, any suggestions on how to bring her back?
