Today i had the opportunity to work with a local chef to learn some new dishes and more sophisticated techniques

Mathieu is the chef owner of la table de Cassan about an hour north of France and a customer

he taught me how to make

fennel carpaccio with a pomegranate vinaigrette

steamed vegetables inside a cabbage leaf, cod with A Parmesan crust, carrots and a buerre blanc

lastly a tarte Tatin

the dishes are simple but had quite a bit of prep work.
