Hey knife nerds!

I am a knife enthusiast and a home cook located in Australia but who grew up in rural Europe where food is half the culture. Also an engineer so loving steel and the theoretical parts of things on everything knife related - not only steel but geometry etc (thanks Larrin Thomas for the heavy lifting!). I like lasers (more so than ultra lasers), and mid-weights with lasery tendency have a special place in my cutting habits as I started with Sukenari when I went higher end, and still love these to this day.

Got a fair collection built over the past few years covering a lot of different shapes and steels, though mainly revolving around semi-stainless and stainless high alloys.

Been lurking here for years and never registered to avoid emptying my bank account on BST… I resisted as long as I could but missed too many opportunities now haha!

I recently got a few bangers which I am very much enjoying (I am into trying as many grinds/sharpeners as possible atm!), in no specific orders : Konosuke Nakiri forged by Shiraki sharpened by Myojin, a Kikuchiyo X Rou (big fan of Nakagawa body of work and wanted to see « Rou »’s grind and finish), and a Tanaka x Kyuzo (just today - very impressed after one prep session).

Got a Kikuchiyo X Izo in the mail, and a few customs from Francisco Vaz at the moment, will likely add a Togashi.

Knives on my hit lists are classics and popular at the moment: Fujiyama FM (preferred Blue 1), Takada Suiboku Ginsan preferably but open to Blue (would not spit on a Yohei or a Konosuke FT), the Sakai Kikumori Yugiri (have been warmly recommended by another enthusiast I trust), and a Konosuke MM Ginsan (low hopes on this one!).

Have been enjoying a lot Hitohira’s offers lately.
 
PS: Realized I just mentioned my Sakai current wish list, but I got a few Sanjo’s on my radar: Toyama SS Blue, Nihei, and Wakui are currently at the top of my list to try from the region. Love a good distal taper!
