Well, it's all in the title, thinking of pulling the trigger via the Fujiwara website but thought I'd ask here first.
This would be my go-to for most veg prep home use only. I like to use the things I buy and only buy if I know I will use, for some reason I just keep looking at this knife and wondering how it would go on a big pumpkin.
 
So this is my new denka nakiri 195mm. It had a couple of low spots so I thinned it out on some shapton pro stones to remove. The knife was very thin to begin with I went to their shop in Tokyo and had 6 to choose from The Finnish was done with a morihei 4000. very hard yet creamy stone. This took me around 2.5 hours to do all up using Knifewear sharpener Naoto’s method. The blade length is 192mm and height is 61mm. When I picked up this knife it felt like it belonged in my hand I tried all the others again one very fat and short it weighed 257g three around 220g and then last 2 came in at 207g mine was the tallest and lightest. Fit and finish is good not like my Mutsumi Hinoura good in the same steel, but it feels so so good. This knife cuts like a dream , only a slight bit of wedging with the hardest out of the fridge carrots but food release is optimal at the expense . I prefer the latter so will keep the convex edge. The spine is 3mm at the handle and 1.5 at the tip. I don’t know the thickness behind the cutting edge as I don’t have any gauges. Teruyasu’s son of the same name sold me the knife and showed me how to sharpen it out back. He told me to always thin the knife behind the edge first to expose more of the super blue steel. And ensure to always keep the convex for food release and edge protection. We chatted for about 40 minutes and practically chose the knife together. The belt sanded finish is so people don’t get too holed up on the finish in exchange for the thinning at every sharpen. Makes complete sense. The scratches were already in the finish behind the bevel I didn’t care one of the other knives had no low spots or scratches but it didn’t feel the same as this knife. I love it and will never regret buying. My eldest daughter has already claimed it when I die which I hope won’t be for a while. Thanks
