I made bacon yesterday on a cast iron griddle with a carbon steel pan on top as a press to keep it flat. Best sandwich bacon ever. The induction cooktop heated both pans, so next time I think I’ll preheat the top pan as well and see if I can make it without flipping it.
For my next project I think I’ll have my local fabricator make a press to fit the inside dimensions of my large rectangular griddle.
