Masashi 245x55 mm ironclad, shirogami #2 core steel. Selling to free up funds for bike components.

It's quite a bit different from my other gyutos, tall throughout most of the blade so it is nakiri-like in scoopability, nicely rounded choil and spine, Sanjo distal taper, very thin behind the edge and soft shoulders. Beautiful KU finish, durable for the time I've had it without any rub-off. Cladding isn't particularly reactive, like most of my knives I did a few rounds of steak to set the blue purple patina before veggies, this one just took a pretty subtle patina which I can polish off if you want. Good edge retention, only been stropped.

Great knife! I love my Masashi 240mm. I saw on an interview that he does this profile with some more flatness than usual so it acts like a blank canvas for the user to put his/her own profile through sharpening. I quite like the concept.

That's quite interesting! The sizeable flat spot is one of my favorite parts about it, nice contrast to the belly on most of my gyutos
 
is this patina from one use or many?
I only cut steak with it for the first 3 uses to set the blue/purple patina. I've cut onions, peppers, and mirepoix with it after that and I haven't noticed any more reactivity so its pretty stable. Here's a few more pics with exposure and highlights turned down to isolate the patina a bit more.

Can't believe this blade is still unsold. Attractive rough KU. Good grind. If you like tall blades, great for push cuts & chopping this is a good deal a capable cutting hand forged knife.
