Just wondering between the two brands, which one worth buying more if you can only choose one 240mm gyuto to purchase from the two and why. How’s the blade geometry, cutting ability, ff between the two brands.
 
First I would probably decide if I want stainless or carbon. Ryusen is going to be stainless steel and Mizuno uses carbon. Ryusen sg2 will have quite a bit more edge retention than anything from Mizuno, but the Mizuno in carbons will be easier to sharpen. Also ryusen has western handles which Mizuno doesn't have so that might also help you decide.

Ryusen is going to be more of a factory made knife vibes being very consistent. With something like the Mizuno, I would look at each specific example.

Haven't had both but I'm sure there are a bunch that have.
