Hi Knife Nuts!,

Wanted to join since I already support one of the members businesses here.

My favorite knife lengths are 180-200mm for small quick preps, 210mm gyutos for an in between gimme some variety, and on the high end, ~225 is a slice of heaven with anything up to 255mm being about my max. I like my knives, whether it be cladding design or handles, with character, but not guadiness. Thanks for having me!

P.S. Slice Of Heaven will never do a BST with Sponge Cake - so don't ask;)

Welcome. Which 225mm knives are your favorites so far, and which knives do you most often use on the sponge cake?

My favorites are a Mazaki W2 gyuto that is just south of 225, and a Sukenari R2 that is just north of the mark. I enjoy both of them for their grinds, and even though the tips aren't super thin, both 1mm @ spine ~1cm from tip, the weight of the knives seems to help them glide through produce.

I've never cut into a sponge cake with a j-knife, yet.;)
