My wife loves that braised brisket and beef tendon dish. Served over thin egg noodles.

I have the flavor down. The beef is tender and the tendon needed more time. I pulled the beef out and kept cooking the tendon. Seems like tendon takes 3.5 hours. I just put the beef back and I’ll let it go for a bit.

This is tomorrow’s dinner. I find slow cook braises better the following day.

Next time I’ll try the pressure cooker. Anyone cook tendons?? I can only find it at ethnic grocery stores anyway. I think it’s in menudo. :)

i cook it all together including the daikon, but i remove each element once its 80-90% cooked. then reheat it all together when served. if you keep it all in the same pot and keep reheating it, the veg and soft meats will go mush.

i usually eat it with rice noodle type carb and a quality spicy oil to dip with..
