Hello all,

New member “OffToTheSide” (if you are a fan of the writer Jim Harrison you may catch the reference). My block has a Hiromoto #2 blue steel gyuto in it that I bought and rehandled years ago, and a Tojiro Petty. Beyond that, a reprofiled old German carbon steel slicer, similar to Sabattier, a couple of utility knives I made myself and sent out for heat treating (Crucible S90v), and a few leftover obligatory Wusthoff blades. My sharpening system is a Wicked Edge. My next blade will be a Japanese Bunka, which is why I joined. Lots of great info here. Thanks for all the hard work put into the site by the Mods, supporting members and contributors.
 
Well you sent me off to Wikipedia to find out exactly who Jim Harrison was; not what I was expecting. Thanks, I feel a little bit smarter than when I woke up this morning.

Are you in the city? Do you have a power hammer on your fire escape to make these petties?

Upstate. I hand sharpened with Japanese stones for years, but much prefer my jig system.
