Hey everyone!
New member very interested in Japanese blacksmithing as an art form. I am an amateur home cook, inspired by a culturally Italian (NJ/Canadian) family full of accomplished home cooks, but I'm still pretty young at 25, so plenty of time for skills to develop - with good fundamentals - can't ignore good knife skills. However, I am humbled by the depth to this theater, blacksmithing is a beautiful (and awesome) art in its own right. I definitely see myself inclined to be a hobbyist / collector / trader, more than a pro. I guess I'll need to keep my day job if I want my collection to grow! And it seems I have expensive tastes.
My collection started from a three piece Shun Classic set I got on sale (I also recently impulse bought a Shun Classic 6.5" hollow ground nakiri to complete my knife block, still waiting for delivery). Those went dull so I sent them back for sharpening, and ordered a Doi Blue #2 Gyuto I'd had my eye on for a year, from chefknivestogo. All told, it was more than my 3 piece set combined, but I am blown away by the craftsmanship and have no regrets. Except that my interest in this area has grown considerably, which is not a good sign for my pocket book.
I have been inclined to start my sharpening stone collections as well, but the total cost for about 4 stones (shapton glass) and a diamond lapping plate was a tough pill to swallow. I hope to keep learning about that aspect to further my progression in this knife hobby.
This forum seems like an awesome place to share knowledge, deepen my understanding, and build a community of people who share this interest.
