Hey everyone. 33 year old cook/chef() who got into the industry at 18years old and feel in love with the pirate lifestyle and most importantly the knives and fire.
Been rebuilding my knife collection, upgrading those knives we all kind of start out with and have been progressing (aggressively) into artisan made Japanese knives and always looking for information and insight.

Welcome! Pro kitchens are both the best and worst place to have nice knives. As a plus, you really grow to understand your own likes and dislikes. The downside is when a new line cook just grabs your $400 knife to shell a lobster.
