Really interesting item here IMO with a further interesting backstory. This is a folding santoku made by Takeshi Saji. I bought this from ToGo when Mark was selling some of his personal collection for charity. This particular piece was given to him by Saji-san as a thank you for years of working together, which I think is an incredible facet of its provenance. He described it as VG-10 but I have scoured the internet and concluded this knife was only ever made in R2, so that’s what I believe it to be. This is a liner lock, and the handle is shaped to give the hand plenty of space for board clearance. As many know, Saji made outdoor knives prior to making kitchen knives, so this knife goes back to his roots in many important aspects. The quality, solidity and smoothness of this knife and it’s operation bear that out.
