228x55mm 217g

Nearly 2cm shorter, but only 3g lighter than my other Yanick gyuto. It's interesting how much of a variation there is between two knives that at first glance seem like they should be very similar. My 245mm is solidly in the midweight category, but this one is edging into workhorse territory, at least on the back half of the blade. Really fun to try different work by the same maker.

Skye Eilers ‘mass drop’. Initial impressions are very positive. Easily slicing paper towel when it arrived. Took down a sweet potato without much effort. Comfortable handle with a high level of f&f all around. 225x55, 206g. Thanks @Matt Jacobs for raising the flag on him a while back.

Love to see his working continue to improve. I have an early iteration of it that I love, and he's one of this class of young makers that's taking all the lessons out there and just running with it.

I am glad to see these finally shipping, I am huge fan of his work and hope to do a custom nakiri soon. I have one if his Vipers headed my way from the mass drop soon.

My 3 newest knife buys in the last few months. I have been looking for a Jiro gyuto and a Suiboku for years, and in the past few weeks suddenly I had the chance to buy them both online/in store.
