Stainless beaters bought for testing, all worked on, not pretty but all excellent cutter

1. Minamoto Masahisa 240mm Yasugi sliver steel $80 $60 SOLD

Feels very close to Jikko mono Ginsan, I feel like it is the same knife but can’t be sure, steel feels better than VG1 but not Moriya Ginsan

Steel feels surprisingly good if it is N690, not glassy, tho not the fastest to raise a burr

Isn't that grand chef series usually marketed as aeb-l?
Always wondered how it compared to gingas.

Most source say it is N690 which would put closer to VG10, some say it is N695 which is just Bohler 440C, doesn’t feel hard to sharpen like some VG10, tho I never spend enough time on this one to tell
 
I can still find some retailers saying it's AEB-L but that could simply be wrong, or outdated information (the line has been around for a while).
I guess it's not really worth obsessing over when it's this cheap.
