Epicurean Edge: Japanese and European professional chefs knives

They seem to be always in stock, have better than average fit and finish, nice ebony handles, very good cutting performance and priced really well. I have 3 of them (165mm, 180mm, 240mm) and they would be my favorite if not for my Yoshikane 210mm. Still, the Hiragatake's get used quite a bit and I highly recommend them.
 
MAC's aren't a bad option, chef series or pro would get the job done.

This is another decent option, unlike some $$$ westerns the spine and choil are actually rounded. Steel is alright and it's thick enouch and stainless enough not to worry about.

If we are going to do Amazon vg10 knife I'd rather buy something like Tuo or Xinzuo who actually owns their production line.
