Hi everyone,

I am really torn between these two brands. I once had a chocera 1k that I worn away to nothing and a kitayama 8000 that vanished, that was my favourite stone.

Definitely going to pick a kitayama but don't know if I should get a 1k and 6k imanishi and be done with it. How does the imanishi stones compare with the chocera line. I also had a couple of JNS synthetics stones but found them to hard for my preference.

These stones will used with European carbons, white steels and blue steels with capability for kasumi work like the kit.

I have the imanishi 1k/6k combo and really like it. I do not have any chosera stones to compare to, but the imanishi is a soaking stone with good feedback. It produces very good edges and I think it’s hard to beat for the price. It does take a while to dry being it’s so thick, but you can permasoak. It is a good stone for polishing, although you will probably need to add a stone in betweeen the 1k and 6k to bridge the gap. Great 1 stone solution for edge sharpening if you are trying to be pragmatic.

Maybe a Naniwa Chosera/Pro 800?
Definitely for a future purchase, I can see a stone like that good for single bevels.

Yeah your right but for double bevels, I see no problem in jumping from 1k to 6k for most knives, been doing that for years with naturals.

Maybe,
800 chocera
1k imanishi
3k chocera or aoto
6k imanishi
8k kitayama

That will be me for the next 5-8years. :)

Will I be missing any benefits from naniwa, for example my old 1k chocera had great feedback, never ran dry or glazed unlike JNS synthetics.

Bester 1200 all the way for me, but it has to soak.
