Although I could make it Filipino style confidently, I do not want to cook it as a variation of lechon as I grew up (and still do) eating this a lot.

If any of y'all have a suckling pig recipe you would like to share, please post them.

The few times I have tried it is from that place in Madrid that's the oldest restaurant in Spain, 2x while drunk from wherever I was in Spain, and a variation of it from Belcanto in Portugal. I still remember the flavor profiles from Madrid and Belcanto (they used an orange zest puree and peppercorn sauce). Main thing for me is trying something new. Ingredients/Spices are not an issue for me to get.
 
I’ve been thinking of doing this sometime over the summer with the father of my daughters godchildren (there are five of them). Got no firsthand knowledge myself but this is kinda how they do it in the Bronx

 
how about a traditional porchetta?
