Up on the chopping block is a 210mm Takamura Chromax Gyuto.
This is my favorite “cheap/budget/beater laser” because the core steel resembles Aogami #2 yet it’s semi-stainless. I had bought one before, sold it, regretted it, and then bought this one again, lol. I’ve used this on the line multiple times, yet I still haven’t had the need to sharpen it. It still has the factory edge, and can still cut thru paper towel. Only cons are a couple stray scratches from use (shown in video). It currently has a nice blue-ish patina running along the core steel. I picked up a 210 Uchi, so this has been sitting, collecting dust. Comes with the original box.
