Both knives have been used and sharpened before but never abused.


First up, am looking to sell my Takeda Honesuki as I no longer use it.

Specs :

192.5g
Spine thickness 4mm
Edge length : Approx 170mm

Has a custom made ebony handle with marble horn installed on it. Also have a "modified" Saya that was meant for a santoku. Ugly but does the job.

Wtf. These are both great knives at great prices, but the sujihiki is a steal. If I didn't just buy the 240 gyuto of the same line, I'd definitely snag the sujihiki.

I own a takeda honesuki and it's an end game honesuki. I use it on poultry, obviously, but it also gets used on almost any protein with bones. I paid $380ish for mine, and I'd honestly pay more if I had to replace mine, so $300 is a no brainer if you have the budget.

Just buy both of these. You can use the Takeda as a petty as well. Then add @Barmoley’s Dalman HSS1 gyuto (or one of the beauties @Chang just posted). You’d be totally done with knife shopping for ~$900-$1400.
