SOLD 2. Manaka k tip gyuto 240 in ATS34 steel. Comes with rosewood handle. Lightly used. $485

how would you explain Manaka's ATS34?

i've only used his blue 1 and blue 2. I love his blue 1.

also, how tall is it at the heel? 56 mm? maybe 57?

He makes his ss sanmai in-house which interested me. Edge retention wise, I think it's close to b2 but not to b1. But it's easier to maintain.
