In need of funds for some stuff after leaving my last job and being without employment for a week….
First up is a Marko Tsourkan petty/mini gyuto in a2. 174x44mm. Bought this for my last job a few months back because I needed a nice compact knife without worrying about high reactivity for a fast paced and compact station. Only been touched up on stones, never a full progression from me. Worked great for its intended use, and now I don’t need it and find myself needing the money more than knife. Great blade, excellent for a pro kitchen between size, comfort, durability, reactivity, and grind. Grind isn’t crazy thin, but really likes to go through product exceptionally well. Also my favorite handle I’ve ever had on a knife. Tsourkan is quite the smith. $340 shipped US **sold**
Mutsumi Hinoura iron clad white #2. 183x38mm. Picked up in person from ckc back in April. This knife punches well above its price point. Nail flexing edge, clean grinds, lovely sanjo style with a thick spine that tapers well. Torches handle done by myself (which was a huge upgrade from stock). Heat treat is stellar. Touches up easily to a really refined edge. Won’t be my last hinoura, I’m seriously impressed with this line of knives… just need some cash right now and this knife is my least needed in my roll right now. $140 shipped US **sold**
