Nowadays Arcos (the biggest spanish knives manufacturer) uses a steel registered as Nitrum whose composition is a secret.

In the past used a steel with vanadium and molybdenum whose knives had this components in the printing.

I have the impression the old steel was better than the current one. Has anyone experience with them?

Another thing to comment: In my home there are more than 10 utility knives like this:

All of then are bent toward the right side. These knives are washed in washmachine. Anyone has any idea about why all bend toward the same side? Just curiosity.

I've only had a few Arcos floating around for a few years, and they're all of the more recent Nitrium stuff. The only thing that really stood out to me is that they seem to have worse corrosion resistance than comparable stuff from Wüsthof. So for example leaving it dirty overnight after cutting a pizza, the X50etc on the Wüsty doesn't particularly care, the nitrium stuff on the Arcos somewhat does.

I can theorize about why the knife bends the same way but it would really just be wild uninformed speculation.

Sometimes these utility knives have stain spots after washing in the wash machine. This one for example:

Spots like that are very common when stainless goes through the machine. A little metal polish will fix it.

They bend because they have thin spines and soft steel. They all bend the same direction most likely because of however you and/or your household members are using them. They should bend back very easily if it bothers you.

I'll speculate just the same: maybe it's related to how they're produced from rolled steel (that actuall comes in big rolls)? And maybe the cumulative effect of the dishwasher temperature has an effect on the heat treatment?

I prefer to keep them bent because maybe it if try to fix it, the blade ends like a 'S' lol.
I thought the temperature of the washing machine was not so high to affect the blade.

I think that the reason to bend all the blades at the same side is because of the steel probably came in rolls which was rolled in that direction.
