Up for sale is my Simon Maillet 175 ko gyuto
Mild steel cladding with 135Cr3 core.
The original knife came with a bevel satin finish. I since polished them – finished on an Okudu suita.
Tiny scratches on the flat sides since I cleaned it from stones acidity and a small chip in the wood close to the choil from hitting by mistake the stone mid polish (focused on it in the video). This is reflected in the price which I am asking.
I am including a leather saya which I have custom made for the knife as well.
I will cover first 15$ of international shipping.
