Another fun Cleaver video. I have never been to a large KKF meet up but I'd imagine it goes something like this.

Such a thin 52100 blade @63/64 HRC and doesn't chip after all that abuse.
 
Cleaver have five sides. sharp, back and flat front, flat side x2. Fun to watch.

The video is not exactly kitchen knife related, but I think that it may some visual reference for discussion on the site. Definately youtube awesome.

dunno if anyone has seen the Begin Japanology series on youtube? It's pretty interesting some of the food related episodes that I enjoyed were

Rice
Japanese Kitchen Knives
Udon
Soba
Ramen
Nabe

Red Sea Bream

Abalone
Fugu Blowfish
Sushi (though the audio drops out as the episode gets interesting)

All quite interesting. I won't post the links but if you just search "Begin Japanology" with any of the words above you will find copies of the episode on youtube. The host can be a bit painful to watch but the show itself is very informative I think. Enjoy :) Also the episode on Hiragana was good too. Haven't bothered with most of the other cultural episodes but I'm sure they'd be interesting if you're into that.
 
oh yeah and one on mushrooms. I have never had a matsutake but I understand a particular species grows in Canada and other parts of North America... Hmm... But I assume the Japanese matsutake is probably quite different from the pine mushroom that grows here.

Watching the "super fast butcher" is more terrifying than impressive. Makes me wonder how he "inherited" the job from his predecessor.
