    American Made Copper Cookware

Wow, lots to unpack here. The absolute best material for heat conduction (perhaps excepting diamond?) would be pure silver -- you can get a solid silver pan from Duparquet or Soy Turkiye (the former is sterling, ~90% silver, and the Soy is pure silver, like 99.9%). However, for searing...

    electric cars.

I just purchased the Tesla 3. Prior to that I had a 2017 BMW i3 Rex, which I leased. I really like the electric cars. They are a ton of fun to drive given their instantaneous torque and low center of gravity. They are also quiet. It is also quite nice that you can charge at home...

    Miyabi birchwood gyuto

There are also the Miyabi Mizu and Artisan lines, both also use SG2. Usually a bit cheaper. 8 inch gyutos available for around $150. They have a hammered look, rather than damascus, for the blade, but the core steel and heat treatment appear the same as the birchwood.

Is there high-end stainless clad carbon knife on the market?

Heiji makes them -- sold by JKI and also Japan-Tool as well as direct by the maker I believe. Also, Itinnomon (JNS).

    Stainless or Semi Stainless Nakiri

Not looking to sell mine, but I'd recommend the Itinomonn Stainless Nakiri from JNS. Mine is really sharp (sticks into my cutting board), thin behind the edge, seems to hold its edge nicely. I really enjoy it.

20 year savings plan for godchild?

    1. Whatever you give should be invested in equities (i.e. stocks), without question, if you are looking at a 20 year time horizon. You can do this either by investing with someone like Vanguard Group (e.g. their S&P 500 fund, their Wilshire 5000 fund, and and International index fund). You can...

    Flat spot ratio on santoku

Okay, here are some photos of a new 180 Heiji. I tried to show how the blade touches the board at different angles. When I did this, I would say the blade appears to have say a 1 - 1.5 inch 'flat' spot. However, the curve seems to be pretty continuous, so I guess you can reach your own...

    Flat spot ratio on santoku

I have a brand new 180 Heiji, but it is at my workshop where I was going to make a leather saya/sheath for it. I'll snap a pic and measure it when I get a chance, but may be a few days at least. Don't think I can get over there til Wednesday.

    240 carbon Kiritsuke options?

Presumably that one is a double bevel knife, given the description of a kiritsuke-shaped gyuto.

    Superbowl

All for one, and one for all ..... .... or not! That is really funny. Eli looks like he is about to be sick. It appears that their mom, who is excited and enthusiastic, turns to share the excitement with Eli, sees the look on his face, and just turns back around. I guess the one thing...

    Superbowl

The Denver D was truly awesome. I too thought Carolina would pull out the win, when they were only down by 6 with quite a bit of time left on the clock. Then, for all intents and purposes, the Denver D scored a second touchdown (causing the fumble and recovering the ball at the 4). It was...

Do single bevel meant to cut on the flat edge?

If the leather is being skived, then bevel up, flat part of the knife against the leather. For general cutting, with a sharp single bevel knife I don't think it matters, but there will be a bit of an angle to the edge of the leather; unless the leather is very thick, the angle should be pretty...

    ATTN: WRISTWATCH GEEKS

I presume you realize that watch is an automatic, not a quartz. From the perspective of watch nuts, that is a big plus, since it has a real mechanical movement in it, rather than a quartz movement. No quartz watch is really worth any significant price from the point of view of a watch lover...

how high to take cobblers knife

That knife, called a lip knife, is generally used to trim the edge of the sole/welt and the heel. It has a 'safety' tip which is bent at 90 degrees to the blade so that the sharpened edge of the knife won't contact and cut the upper.

    Audiphiles Fostex thx00 on massdrop

Thought about ordering those, or a pair of Hifiman 400i, which were on sale for $299 instead of $499, but just couldn't pull the trigger as I don't really use headphones much at all. The Fostex Massdrop sold out -- 1950 pairs -- in a few days, but the drop will likely be repeated in the future.

how high to take cobblers knife

Is he a cordwainer (shoemaker) or a cobbler (shoe repairman)? Shoemakers use different knives for different tasks -- there is cutting the heavy leather for insoles and outsoles, there is thinning the upper leather for overlapping seams (skiving), there is trimming of the edges of the outsole...

    Mauviel tin lined copper

The stainless you pretty much never have to worry about, unless you leave an empty pan on a very hot burner (which I've done, and even then the steel survived but is discolored). The tin you can get too hot and melt, and it does wear out over time. That being said, tin is a much better...
