Just a standard home cook who likes using a bunch of knives.

Need to try some sharpening of my own at some point but I should probably buy a cheap'ish knife to try on before messing up anything I have that's "good".

You absolutely should explore sharpening and this forum can help.

Cheap is a relative term but if you want rustic but good performance at good prices, Knife Japan is a great place to start.
