C105 x Sheffield Cathedral wrought w/ Tassie & sheeps horn handle
A classic Catchie made with some of the last historic wrought iron from the Sheffield Cathedral. Handle is an insane piece of figured Tasmanian Blackwood I’d put up against any Koa. Steel is superb, one of my absolute favorites to sharpen. The iron is exceptionally easy to work with as well and the whole package takes a lovely polish. The grind is not well represented by the choil at all - it is a 50/50 low bevel grind with subtle hollow forging above the shinogi. Great taper and a very stiff blade, very solid cutting feel. Can clean up the patina if you want.

1.2519 x wrought iron w/ Missouri Osage orange handle
From a recent batch. I actually LOVE this knife. I cook a lot more at home than at work these days and have been exploring smaller blades, but given our vegetable forward diet and my own idiosyncrasies, I typically grab a nakiri over a gyuto for lighter prep. The slim handle makes this knife feel taller and more weighty than it really is. It is also extremely comfortable and nimble in a pinch grip and I’m saying this as a large handed fellow. Taper is absolutely unreal coming out of what I’d call a semi-integral neck. Extremely clean grind also - really easy to let the bevel height climb at the heel and be smaller at the tip with this much taper but this keeps things nice and even. Totally stone ready as well which is a huge plus for long term maintenance. Can clean up patina on request.

Radonia Breg, suji (320x53) - $475
1.2562 x clean wrought iron w/ oak handle
This is actually my fastest catch & release. I put out a WTB for suji recently and was overwhelmed with responses (at least 25). This was one of 4, I acquired (yeah I really overdid it, give me a break). Really cool knife with just the silliest most fun spine / taper ever. Stone finished bevels and ready for a proper polish. Wrought iron. German aogami super (1.2562). What isn’t to love? Sadly I can’t keep 3 suji and this one with it’s matching saya doesn’t fit in my drawer or roll. Someone else deserves to use and love this monster. There is a small crack in the saya.
