What length of knife (blade) are you interested in (in inches or millimetres)? I dont know I mostly break down sea basses or breams that are not longer as 40cm. So i guess 180mm.

Do you require a stainless knife? Definitely carbon (white 2 if possible)

What is your absolute maximum budget for your knife? 150euro

KNIFE MAINTENANCE
Do you sharpen your own knives? Yes, but i use a edge pro. I will also use this deba to learn how to sharpen single bevels knives freehand .


Are you interested in purchasing sharpening products for your knives? No. I already have a king 1000/6000 combo stone.

Not too many 180mm deba around for that kind of coin. Maksim at JNS has a kurouchi Itinomonn that is right on budget.

No help on the deba but think it may be easier to learn to sharpen a double bevel knife than a single bevel. Good luck either way.

A 180 is a good size. Maksim's Itinomonn is about as inexpensive a deba that you are going to find, especially considering shipping and import duties.

First thanks for all answers.
I dont really need a deba but I would like to try a single bevel knife. And a Deba is a knife that could come handy for braking down fish, which i occasionally do
That is why i didt considered a 50/50 deba.

My next question is how would this knife (Kitaoka 180mm Deba Blue #2 rose CKTG) compare to the ITINOMONN KUROUCHI DEBA 180MM. I dont know either of the makes, thats why a ask.
I like the handle of the Kitaoka better.

Jon talks about it in the video linked above. IIRC, he mentions that even though the composition is different than the whites and blues, that the performance characteristics lie somewhere between White #2 and Blue #2
