I'm super new to Japanese knives, I purchased the set of Euroline Damascus Kramer by Zwilling. I'm still looking for a good Japanese petty knife. I would love to grow my collection in the future. I have been looking at different Japanese knives lately. I have been trying to get my hands on a petty knife from Fujiwara Kanefusa 25th but still have no idea about where to acquire one. I'd love to hear more advises on what petty knife 120mm to 135mm to purchase for 1k budget. Looking forward to see and learn more while in here. Thank you so much guys, I'm glad I found this Forum!

Not trying to discourage your enthusiasm but have you thot about jumping into the petty with something more suited to your experience with the knives? 1K is a lot to drop, especially since there are so many steel types, grind types, handle types, etc, etc, etc.

A solid petty should run about $1 / mm. And if you start with something that doesn't work for you, the resale won't hurt you too bad. If you start with spending a grand, you'll likely take a sizeable hit should you want to resell. Suggest you spend some time getting to know what you like and then consider shopping for the dream knife.

All this and bear in mind that a proper petty is 180mm. Shorter it's a parer. Longer it's a suji. :cool:

Start a new thread in the Kitchen Knife section, post that form into it and fill i tout. Folks will definitely give you suggestions but you might want to start by scaling back to say $300 or so top end. Up to you but the $1k and up club starts getting pretty exclusive even for gyuto let alone a petty.

Hey Daveb Thank you so much for your reply! I don't really know too much about Japanese knives, I just really love the way they look, I'm a professional pastry cook, so I don't really need a large knife, So a petty knife is a utility knife? I use knives to process fruit everyday, so I really like to get a nice knife thats around 120mm to 135mm. I have been looking at brands like takeshi saji makie series and hinoura yusyoku, still trying to figure out who is considered more unique. I pretty much just want a really unique and high quality knife for my everyday work. I'm open to all brands and individual knife makers. Do you have any suggestions? Thank you!
