Been lurking a while now, soaking up the knowledge. Used to be an avid collector of EDC knives, but kitchen knives seem way more fun since I actually get to use them. Did a lot of research before finally picking up a new gyuto (or two...or three) to replace my $17 Mercer Millenia 8" chef knife that has served me surprisingly well the last 5 years.
