Having been lurking here for a short time I decided to join as I have learned a huge amount in a short time. I appreciate the friendly atmosphere here and hope to start making some well informed knife decisions, both for knives and for their maintenance maintenance.
By day (and night sometimes) I am a nurse in operating theatres and have almost zero history with high quality kitchen knives. At home my wife and I are becoming more adventurous cooks hence the hunt for some quality tools.
