I have been reading and learning what a great site! I am a home cook with old knives looking to upgrade. I have a MAC Professional 6.5" Santoku Knife, Mac pairing, MAC Professional 10.5" Bread Knife and a few old Henckels that came in a knife set. Looking to upgrade to a Japanese Gyuto 210mm or 240mm.
