I developed a curiosity for Japanese kitchen knives in 2009 and bought a Shun MH0718 7" all steel (handle too!) construction santoku. Loved it and would never go back.
Learned to freehand sharpen on DMT diamond plates and put a polished shine on with the Spyderco Ultra Fine Ceramic stone.
Later bought a Miyabi Birchwood SG2 santoku and petty.
Recently have been interested in getting a nakiri with Apex Ultra core.
Also a bit interested in pocket knives and knife steels generally. Have been reading Knife Engineering by Dr Larrin Thomas.
