I was looking forward to this drop so set the alarm at 5:50PDT but didn’t care for the dimensions and geometry for me.
Besides, I’m noticing it’s hard for me to get away from the Shihans and Birgerssons so it would probably be a drawer queen.

This Hitohira Gorobei x Kyuzo looks like a nice deal. Damascus clad (if you're into that) and ground by Kyuzo for $275. Only 198mm but you do get a full 50mm heel height.

If the Gorobei steel is even halfway-decent, this seems like a bargain. Strata sells the 210 TxK for $475. Yes, I know that Tanaka Blue #1 demands a premium, and it has a nicer handle, etc. But this one's a bit taller and thicker (and definitely looks more like a big santoku) and it's $200 less.

Is it just me or are the bevels extremely asymmetrical? All of his work is really thin behind the edge, which is cool.

I had a Gyuto from Tobias Hangler to test. I was very positively surprised . That's why I want a custom from him.
I actually try to use all the knives in rotation. That's why I have all the knives on a rack and on magnetic strips. It's just slowly getting tight. If I keep this up I'll soon have all the walls in the kitchen covered in knives
So there will be no drawer queens… hope so

Just about the coolest single bevel I've seen. I love all the little finishing details - the dark ura, the subtle texture in the choil and spine rounding, the depth of the KU, the be beveling at the spacer and handle junction, etc.

Same, had my order of A, D, G for priority. Didn’t matter. Checked A, clicked add to cart, sold out prompt. Went to D, same thing. Went back, all sold out. This was all within 15-20 seconds lol.
