This Hitohira Gorobei x Kyuzo looks like a nice deal. Damascus clad (if you're into that) and ground by Kyuzo for $275. Only 198mm but you do get a full 50mm heel height.

If the Gorobei steel is even halfway-decent, this seems like a bargain. Strata sells the 210 TxK for $475. Yes, I know that Tanaka Blue #1 demands a premium, and it has a nicer handle, etc. But this one's a bit taller and thicker (and definitely looks more like a big santoku) and it's $200 less.

I was looking forward to this drop so set the alarm at 5:50PDT but didn’t care for the dimensions and geometry for me.

Besides, I’m noticing it’s hard for me to get away from the Shihans and Birgerssons so it would probably be a drawer queen.
I had a Gyuto from Tobias Hangler to test. I was very positively surprised . That's why I want a custom from him.

I actually try to use all the knives in rotation. That's why I have all the knives on a rack and on magnetic strips. It's just slowly getting tight. If I keep this up I'll soon have all the walls in the kitchen covered in knives 😂

So there will be no drawer queens… hope so🫣😂
