polishing pakka handles?

I have a few Misono Swedish carbon knives with the pakka and brass pin handles. The handles are starting to become dull and grayish, just from regular use and washing. Otherwise no scratches or anything major, F&F is actually great on these, everything is nice and flush.

I've been thinking about sanding them and then oiling, or applying the same mineral oil + beeswax mixture I use on wa handles.

Any tips? My main questions are (i) which grit should I start on and (ii) how high should I go - I like a glossy finish but don't want a slippery handle...

Just a few days ago I happened to sand a Morihei Hisamoto pakkawood handle after I had reshaped it with a file to make it semi-octagonal.
Used 1000-1200 grit with some water. Made it shiny quickly even though I didn't try very hard to get the most polished look.
