I have a Suehiro 800 grit and I need to add my next finer grit stone.

I have stainless knives. I'm a home cook and I share the kitchen with a non knife nut. I do all the sharpening.
In a year I might sharpen a knife once a month and I'm on a budget. (did I mention that I am the only knife nut in my house)

So, I don't do lots of sharpening, I'm not rolling in money, and I need a stone that is finer than my current 800 grit suehiro. I was thinking a 2000 grit.

What can you recommend?

That combo should offer a nice mirror finish on stainless. Sometime when you've got some extra coin you might want to fill in with a Bestor 1.2K
 
It's a bit softer stone which produces a nice creamy mud. Gives off a great feedback, cuts rather quickly and produces a shinyish bevel with some decent bite. Perfect stopping point for Gyuto and other double bevel knives.
