You know, now I'm reserving judgment under the premise that the main variable so far was me and not the steel. But if I had to pick one I'd say YXR since they're so rarely available whereas HAP comes out a few times a year and from other makers too. I also really like the grind, tip, and profile on the YXR 210mm gyuto; not sure if they're the same across all steels by Sukenari.

eta: just sharpened both. Yxr sharpens much more easily but hap was not troublesom. Yxr edge does remind me a lot of sld, the same kind of toothiness at high grits, whereas hap is more razor like. Both are sharp as an SOB now so back into the fray tomorrow.
