Honyaki gyuto in TWR from Samir Yousri. Asking Euro 750.
This is a very rare knife. The steel, TWR, is perhaps the first super steel, and with only a limited amount left it will only get harder to get a hold of knives with this steel. Yousri spoke with the maker of the steel, and they think that this is one of only a few TWR honyaki available. The hamon is rather weak, which is probably related to the make up of the steel.
It is difficult to accurately capture the finish of the knife. It has a mirror polish, with a subtle ”foggy” hamon. With some polish the finish can become even cleaner, but I was a bit careful to keep the hamon. The polish is a good base, should one want to try and bring out even more details from the steel.
Knife is a nimble gyuto, with a thin-mid grind. Grind is fully convex, with a right-hand bias. This is one of those knives that are just comfortable to use, and due to balance and size it seems to not cause any significant fatigue.
If you’ve not heard the maker’s name, Yousri is a well-respected member of the Swedish knife community. He has worked with lots of makers, most of the TWR from Sweden has been sold by Yousri, and he has an amazing collection of handle wood. He doesn’t produce that many knives, but those he produce are stunning (search for his IG).
