I'm in Hendersonville Tennessee just north of Nashville.
I don't have a lot of knives but I guess one of my favorites is an old Forschner 10" cin along with a Mac 9.5 chef's knife.
Definitely have mostly cheaper knives like Dexter but like to keep them sharp.
I've stumbled upon this forum from time to time doing searches for info but never signed up until now after buying some good whetstones and a couple Japanese knives. Enso HD Bunka and the 5.5 prep to go with it.
After the Mac which I'ved had a while it'll be my first experience owning Japanese style knives, the Mac is more along the lines of a French knife I guess.
I cut meat by trade so I cut a lot daily.
Just wanted to say thank you for all the good info.
 
Welcome.

Several folks around here who like Forschner, Dexter, etc. and no arguing their merits in butchering.

What did ya get for stones?

I already had a King, and a couple older don't know for sures....
Leather strops that I made and a belt grinder, I'm trying to get away from the grinder and do more hand sharpening.
