Do bees worship your backsplash?I bought a sauté no. 27 and a paella no. 35 last month after learning about them here, and I’ve been using them pretty much nonstop. They’re ideal for searing, but I’ve used them for everything from kimchi fried rice to corn fritters with excellent results. Pretty attractive once seasoned as well.View attachment 315576

I actually got a 8.5 skillet from Staub, they are always on sale for $99 everywhere, surprising big for a 8.5, tho if you are cooking for more than 2 people a larger one might be better. Daily Pan is a perfect couples’ pan for meNice cōck!

Most of the Debuyer pans are also 3mm. Though they do have some 2mm lines / models.These will be somewhat thicker/heavier than typical DeBuyer carbon pans. Standard Darto pans are 3mm thick, DeBuyer Mineral B is 2.5mm.

I think where the 'pan as a lid' thing really shines is for bread baking in cast iron, since it makes it much easier to insert the dough when the whole situation is upside down. Thanks for the heads up! The wife has been making 2 sourdough boules at a time but we only had one dutch oven so she had to put one in the oven at a time and then swap out once the first was done.
